Ingredients

    Rice Brown Basmati, Lundberg 1 Cup

    Natures Promise Baby Spinach, 10 cup

    Raisins, 1/4 cup, packed

    Almond Milk, Blue Diamond Almond Breeze Original Unsweetened, 1/4 cup

    Dry Roasted Sunflower Seeds, 1/4 cup

    Extra Virgin Olive Oil (Filippo Berio), 1 tbsp

    Fresh, Raw Garlic 5 cloves

Directions

Cook rice as directed (w/o added butter/oil/margarine)

Soak Raisins in Almond milk until plump (heat if desired)

Heat Olive Oil and Garlic in pot until soft.
Rinse Spinach, add (wet) into the pot and stir on high heat until wilted.

Add rice to Spinach Garlic mixture.

Mix in Raisins (w/ any left over milk) and Sunflower Seeds
