Ingredients

Whole Wheat Pasta 1 lb
Turkey bacon (about 6 strips cut into small bite-sized pieces)
Egg substitute 1/4 cup
Parmesan cheese 1/4 cup
Garlic (about 3 or 4 cloves - more if you REALLY like garlic)
Apple juice or dry white wine 1/2 cup
Red Pepper Flakes (about 1 teaspoon)
Directions
Boil water for pasta. Cook pasta until al dente (roughly 7-8 minutes).
Meanwhile, heat large skillet over medium heat. Add turkey bacon and cook for 2 minutes. Then add red pepper flakes and garlic and cook for another 3 minutes.
Mix egg substitute with one ladle full of pasta water and mix together (it helps to temper the egg so it doesn't scramble in the pan later).
Once pasta is done, drain well and then add to the skillet with the bacon and garlic. Then pour egg mixture over the top and toss thoroughly to coat the pasta well. Remove from heat and add cheese and some pepper (and salt if you wish). Serve warm.
Makes about 6 - 1.5 to 2 cup servings.
