Ingredients
-
Garlic, 2 cloves
*Enova,(soybean oil and canola oil), 1 tbsp
Onions, raw, 1 cup, chopped
Celery, raw, 1 cup, diced
Chicken Breast, no skin, 16 ounces cooked
Jenie-O Turkey Italian Sausage-2 links cooked
Yellow Sweet Corn, Frozen, 2 cup kernels
10oz. bag frozen okra
Canned Tomatoes, 3.5 cup
Shrimp, cooked, 7 oz
Swanson Chicken Broth 99% Fat Free, 8 cup
Water, tap, 2 cup
Directions
Saute onion, celery and garlic in the oil.
While waiting on that, chop your chicken breasts and sausages.
When partially transparent, add your broth, vegetables, and the chicken and sausage.
Add any spices you like. Salt and pepper of course, we like the cajun blend and bay leaves. Just make sure you take them out before serving.
Let it simmer on medium-high heat.
When everything is heated nicely toss in the shrimp. We used salad shrimp. It's what we had on hand. My husband loves this. It's not easy to convert him. If he likes it, I did it!
This makes 14 one cup servings.
