More quick-bread like than muffiny. Still awesome for 84 calories. Ingredients

    3/4 c granulated sugar substitute for baking
    1/2 cup canned pumpkin
    dash salt
    1.5 cups frozen berries of any combo, defrosted
    1 medium egg
    I tangerine, juice and zest
    1 cup water
    2 T baking powder
    extract of choice
    2 cups organic white whole wheat flour

Directions

Preheat oven to 350.

Combine all, folding in berries and flour last. Portion 1/3 of a cup into each cup of a sprayed 12-ct muffin tin.

Bake 20 minutes or until a toothpick, inserted into center, comes out clean.

Makes 12 muffins.
