Ingredients
-
1 TBSP Extra Light Olive Oil
2 lbs Ground Beef
2 lbs Stew Meat
1 Medium Yellow Onion, Chopped
3 Cloves Garlic, Crushed
2 McCormick Original Chili Seasoning Mix
2 28oz Cans Diced Tomatoes
2 15.5oz Cans Chili Beans
2 15.25oz Cans Kidney Beans, Drained but not rinsed
2 15oz Cans White or Pinto Beans, Drained but not rinsed
1 TBSP Sugar
Directions
Makes approximately 24 1-cup servings.
Heat oil in large stock pot over medium-high heat. Add onion and garlic to oil and cook for 3-4 minutes until the onion begins to soften. Add ground beef and cook, crumbling, until almost no pink remains. Drain most of the grease. Add stew meat, sear stew meat as best you can. When stew meat is cooked through, add all remaining ingredients except for the sugar. Cover and bring to a boil. Reduce heat and simmer for 15 minutes. Taste and add sugar if needed (sometimes the chili is a little bitter).
At this point the chili is ready to serve or you can change the heat to low and let it sit for an hour or more.
