Introduction

I like to eat this as a snack or with a little soy milk for breakfast. It can be served warm or cold. It is also really good as a dessert when mixed with a little pudding or whipped topping. I like mine pretty sweet, so I use a good amount of Splenda.

Ingredients

    1 cup uncooked quinoa
    1 can ( 20 oz) pineapple in juice
    2 bananas, mashed
    1/4 cup coconut
    8 packets Splenda (use more or less to taste)

Directions

Put quinoa in pan. Add juice from pineapple can and enough water to equal 2 cups. Bring to a boil and cook until almost all of the liquid is absorbed. Add pineapple, bananas, coconut and Splenda. Mix. Serve warm or cold.
