Introduction

Number of Servings: 12

Ingredients

    1 lb boneless, skinless chicken breast,
    1 can mexicorn, drained and rinsed
    1 can black beans, drained and rinsed
    4 cups Enchilada Sauce
    1 can Rotel (mild, medium or hot... your choice!)
    1/2 tsp Cumin
    1/2 tsp red pepper flakes
    1 Tbls dried minced onion OR 1/2 cup diced fresh white onion

Directions

Place all ingredients in crockpot and set on low for 6-8 hours. Shred chicken and stir prior to serving. If serving with tortillas or tacos, you may wish to remove the mixture from the crock pot and drain the excess sauce/juices. If serving as a chili/soup do not drain excess.

makes approx 12 1/2 cup servings
