Introduction

This soup, which is often thought to be a french recipe was actually invented in new york city. This is my take on it. Serves 4 people. This is generally served chilled. But I like it hot. Number of Servings: 4

Ingredients

    3 medium Yukon golden potatoes
    1/2 cup of yellow onions
    3 cups of leek onions chopped
    1 cup of homemade vegetable stock
    2 cups of 1% milk
    2 TBSP of olive oil
    1/4 of tsp of salt
    1/4 of tsp of black pepper
    3 small cloves of garlic



Directions

1- Boil the chopped potatoes until cooked.
2- meanwhile saute the onions and garlic and leeks. on medium heat
3- Once cooked--add the cook potatoes to the mixture and add the salt and pepper to taste. Cook for another minute or so and add the stock.
4- cook on low heat with the stock.
5- turn off the heat and pour the mixture in a blender/food processor/ or use a hand held blender.
6- add the milk and mix away

at this point you choose to chill or enjoy as is. happy eating.
