Ingredients

    1 cup brown rice flour
    3/4 cup barley, milled into flour
    3/4 cup sugar
    1 t baking soda
    2 t baking powder
    1 t cinnamon
    1 cup kefir, buttermilk or milk (low-fat)
    1 larged egg
    1 cup unsweetened applesauce

Directions

Mix dry ingredients together with a whisk. In a seperate bowl, mix wet ingredients. Combine the two, stirring only to mix. Pour into greased muffin pan. Bake at 425 17-20 minutes.
