Ingredients

2 T. Extra Virgin Olive Oil
Approx. 2 lbs Pork Loin, trimmed of all visible fat. *
1 Large Onion
1 T. minced Garlic
1/2 sm bag Baby Carrots
1 tsp. Flour
2 tsp. Corn Starch
2 T. Chopped Dried Rosemary
1 T. Dried Thyme
1 T. Adobe Seasoning
1 T. Black Pepper
14oz Can of Fat Free Low Sodium Beef Broth
14oz Can of Fat Free Low Sodium Chicken Broth
* The loin I used was approx. 2 lbs when I started and ended up being 1lb 12oz after I trimmed off all the fat. N/I is bassed on 1lb 12oz pork loin.
Directions
Mix seasonings and herbs together. Cut Pork into bite sized peices. Coat with 2/3 seasoning mixture. Brown in Skillet in oil over Med. High heat.
While Browning, Cut Potatoes into bite sized peices. Cut Onions into large Chunks(they will cook down). Add potatoes, onions, garlic, and carrots to Slow Cooker (cut carrots in half if needed). Turn on High.
Remove pork from pan, while keeping the juices and remaining fat in pan, and add to Slow Cooker. Place pan back on heat and add Flour while whisking to disolve. Let cook. While flour is cooking add Corn Starch and remaining seasonings to some broth to disolve. Slowly wisk all broth into pan. Simmer a minute or so to thinken. Add to Slow Cooker. Cover. Cook 4 hours on hi or 6-8 hours on low, Or until potatoes are soft and Pork is tender.
