Ingredients

    Chicken, diced 1 cup
    olive oil 2 tbls
    Celery, 1 large stalk, diced
    Onion, 1/2 larged, diced
    carrots, 2 whole, sliced
    Swanson Chicken Broth, 1 carton
    2 cups water
    Diced tomatoes, 1 can
    salt, 1 tsp
    thyme
    cinnamon 1 tsp
    red pepper flakes 1 tsp (to taste)

    Basil
    parsley
    cinnamon 1 tsp.


Directions

Brown Chicken pieces. Sautee vegetables in olive oil to sweat. Do not brown. Add chicken broth, tomatoes, 2 cups water, chicken and spices, heat to boiling, reduced heat and simmer for 1 hour or until vegetables (carrots) are cooked.
Great for slow cooker as well.
