Ingredients

    1 lb. green beans (fresh or frozen)
    8 oz. jar artichoke hearts
    1/2 cup olive oil
    1 cup Italian bread crumbs
    1 cup grated Parmesan cheese
    6 cloves of garlic
    salt and pepper to taste

Directions

Blanche the green beans until barely tender in a pot of boiling salted water. Medium-dice the artichokes.

Saute the onions and garlic in olive oil. Mix the green beans, bread crumbs, cheese, artichokes, and the oil, onions and garlic. Season liberally with black pepper; salt to taste.

Put mixture into 9x14 baking dish and sprinkle the top with additional bread crumbs and cheese. Bake at 350 for 20-30 minutes.

    Good
    I made this for a family catfish fry. It was pretty easy to assemble. I used 3 cans of cut green beans instead of fresh. I wasn't sure how much onion to use, so I just used 1 small. A nicely different green bean dish. - 7/16/07
