Introduction

This is a chocolate pudding recipe that I modified for my lactose intolerant husband. It uses Unsweetened Original Almond Breeze, but I think that unsweetened soy milk would work too. Ingredients

    3 Tbsp Corn Starch
    3 Tbsp Granulated Sugar
    2 Tbsp Cocoa Powder
    2 Cups Unsweetened Almond Breeze Original
    1 tsp Vanilla Extract

Directions

Makes 4 servings

Mix dry ingredients together and place in a blender along with the 2 cups of Almond Breeze.
Blend well, and pour into a medium saucepan.
Heat on medium, stirring occasionally until the mixture comes to a boil. Then reduce heat to a simmer and stir continuously for 4 or 5 minutes.
Remove from heat, stir in 1 tsp of vanilla extract.
Pour into four individual serving bowls or ramekins.
Chill until set.

    I made this last night! I don't think I'll ever buy little pudding cups again. Thanks so much!!! For me this yielded 1 1/2 cups of pudding which surprised me because it was 2 cups of milk? Anyway...I put it in 1/2 cup dishes and then just logged it as 1.333 servings. Perfect for morning snack!! - 2/15/11

    Really delicious! I love chocolate pudding, but I wanted to make a healthy version instant using instant. The only changes I made were using organic versions. I ate with a side of fresh raspberries to make it more "filling". - 5/11/10

    really good! i added more vanilla and for an extra treat, crushed up some reduced fat graham crackers. put them in the bottom of a pie dish..poured the warm cooked pudding over crackers and topped it with toasted sliced almonds, then let it set... loved it! - 7/4/11
