Ingredients

1 cup whole wheat flour
1/2 cup rolled oats, ground (I use a coffee grinder)
1/8 cup whole rolled oats
1 1/2 tsp baking powder
1/4 tsp baking soda
1/8 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg
1/2 cup egg beaters (or two eggs)
3/4 cup sugar
1 1/2 tsp vanilla
3/4 cup mashed banana (about 2 medium, a little more or less is fine)
3/4 cup applesauce (I use homemade so I can control the amount of sugar)
Directions
Preheat oven to 375 degrees and lightly spray a muffin pan with non-stick spray.
Mix the dry (flour, oats, baking powder and soda, salt, cinnamon, nutmeg) in a large bowl and make a well. Mix the wet (egg beaters, sugar, vanilla, banana, apple sauce) in a separate bowl and then add to the dry well. Stir until combined, may be a wee bit lumpy and should look kind of like cake batter.
Measure 1/4 cup batter into 13 muffin cups and bake at 375 for 17-19 minutes. Makes 13 medium sized muffins.
We like to top ours with more apple sauce (we are huge fans of apple sauce) or fruit flavored cream cheese.
Of course, you can put this into a bread pan and bake for about 45 minutes.
Or put 1 tbs batter into mini muffin cups and check after 12 minutes, may need up to 17 minutes - this makes 52 mini muffins, divide nutrition info by four for the values. These are fun for group gatherings!
