Introduction

Old family recipe, yummy and mildly sweet even without toppings-- and though there is no sugar in the recipe, it is definitely NOT low fat! Hasn't been tried with egg beaters... yet! Ingredients

    5 large fresh eggs
    approx 1 oz milk
    1 tbsp real vanilla extract
    1 tsp ground cinnamon
    4 slices wheat bread
    1 tbsp extra virgin olive oil

Directions

Add a bit of the oil to frying pan or griddle (may be supplemented as needed) and allow to heat to med-hi. Surface is ready when a drop of water sizzles on it.

Beat together: eggs, milk, vanilla and cinnamon. Pour into shallow dish or pie plate. One at a time, coat each piece of bread in the egg mixture and place carefully on the hot surface. After about 2 and 1/2 minutes,or when you can see the edges browning (stoves vary and you have to watch) turn each piece over and cook for another 2 and 1/2 minutes. Turn pieces over again to check: both sides should be golden brown and the bread should feel slightly firm when turned.

Plate. Can be served either as is, or with any pancake topping: butter, sugar free syrups if you like, peanut butter, fruit...

Recipe makes 4 servings.

For large gatherings (brunches), use 1 egg per slice of bread plus one extra egg, and add vanilla and cinnamon in proper ratio.
You can bake multiple pieces on a cookie sheet at 400 degrees until done, turning at least once, and dress it up with a small bit of butter or oleo, powdered sugar or sugar substitute, and a garnish of orange zest and chocolate curls... pre-curled, of course! And that does change the nutritional value somewhat... LOL
