Introduction
When I am craving chocolate I make this very healthy, vegetarian recipe - really rich, HEALTHY chocolate ice cream made from avocados. It's amazing and SO satisfying without any of the guilt from 'cheating' on my diet! :) When I am craving chocolate I make this very healthy, vegetarian recipe - really rich, HEALTHY chocolate ice cream made from avocados. Ingredients
-
1 Avocado, pitted and scooped
1/2 tsp vanilla extract
1 tbsp cocoa powder (less or more depending on desired intensity)
1 tsp Rice Dream
2 droppers full of Liquid Stevia
Directions
1. Slice a barely-ripe avocado.
2.Puree it in the food processor until it is smooth and creamy with no lumps.
3.To help blend, I added in a teaspoon of Rice Dream rice milk.
4.Then I add unsweetened cocoa powder, vanilla extract, and Stevia (an amazing natural zero calorie sweetener), and pulse it until it is mixed thoroughly.
5. I usually freeze it for 30 minutes or so to make it colder. Another option would be to freeze the sliced avocado beforehand and then follow the recipe as normal.
Makes 1 to 2 servings. I found this very rich and enough for two people, or one very hungry person.
