Introduction
This meatloaf is great, reminds me of home every time I eat it. Instead of making it in a pan like mom used to, I make it in a muffin pan for easy serving sizes :) This meatloaf is great, reminds me of home every time I eat it. Ingredients

1 egg white
1 pound of ground beef
1/2 cup copped onion
1 cup sliced dill pickles (also a cup of dill pickle juice)
1/2 cup Heinz ketchup
1/2 cup Quaker Oats (can be either 1 minute or 5 minute)
Directions
Preheat oven to 350
Mix together the egg white, beef, and onion. Mix in 1/2 cup of dill pickle juice. Spoon the meat mixture into the muffin pan, leaving room at the top of each 'muffin' for the sauce.
Mix together the Heinz Ketchup and the other 1/2 cup of pickle juice.
Lay the sliced pickles on top of your 'muffins' and pour the sauce on top.
Put in the oven for 25-30 and then let cool for a few minutes before spooning out the muffins.
