Something light and easy for a hot summer day. Something light and easy for a hot summer day.
Number of Servings: 4


    1 7 ounce pouch tuna in water
    1 15 ounce can Great Northern Beans
    2 tablespoons chopped parsley
    3 small radishes, chopped
    1 scallion, chopped
    juice of one small lemon
    2 Tablespoons light mayonnaise
    4 pitas


Drain and rinse the beans. Add the beans and the contents of the tuna pouch to a bowl. Add chopped parsley, scallion, and green onion, juice of one small lemon, light mayonnaise and a couple of grinds of fresh black pepper. Stir gently until well combined. Fill pitas to make sandwiches.

Makes four sandwiches.
