Ingredients

1 1/4 c flour
1 tbl baking powder
1/2 to 1 tsp salt (according to taste)
1 c shredded wheat (I used the bite-sized variety)
1 c nonfat milk
1 c mashed ripe banana (= 2 large bananas)
2 eggs
1 tsp vanilla
2 tbl melted butter
1/3 c brown sugar
1/2 c raisins
1/2 c walnuts (optional -- if omitted, recipe makes 12 mufins)
Directions
Heat oven to 400 degrees. Mix flour, baking powder, and slat in a large bowl. Mix cereal and milk in a bowl or plastic container; let sit 5 minutes. Mash or puree the banana (I used a food processor, but a blender would make short work of this, too.) Stir in eggs, sugar, butter, and vanilla. Add cereal-milk mixture and banana mixture to flour mixture, stir until just moistened. Spoon batter into a muffin tin lined with cupcake papers or sprayed with nonstick cooking spray. Fill cups almost full. Bake 20 minutes or until golden brown. Serve warm.
Makes 13 muffins, or 12 muffins if nuts are omitted.
