This is a lightened version of one of our favorite cakes. This is a lightened version of one of our favorite cakes.
Number of Servings: 20


    Bottom Layer:
    One cake mix (yellow is the usual but you can use any flavor you want and adjust the topping too.)
    1 lg. egg
    1 stick margarine (light)
    Top Layer:
    1 (8 oz) bar Neufchatel Cream Cheese
    2 lg. eggs
    4 cups powdered sugar


Mix the cake mix, margarine and egg with a fork till margarine is thoroughly blended. Pat into greased 9x13 pan. Mix the cream cheese, eggs and powdered sugar well. (No lumps of cream cheese.) Pour over the bottom layer. Bake at 350 degrees for 30-35 minutes. Do NOT overbake or it will be very dry instead of chewy.
You can do this with a lemon cake mix and add a little lemon juice to the topping or do it with a chocolate cake mix and add a little cocoa powder to the powdered sugar, etc. Use your imagination!
