Introduction
This is another hit with my kiddos ranging in age from 5 years to 16 years of age. This one is all my concoction from playing and from using what we had in the refrigerator and it is yum! Ingredients

* Olive Oil, 3 tbsp
* Onions, raw, 1 cup, chopped
* Celery, raw, .5 cup, diced
* Carrots, raw, .5 cup, chopped
* Garlic, one clove chopped
* Zucchini, 1 cup, sliced
* Stewed Tomatoes, 6 cup
* Water, tap, 6 cup (8 fl oz)
* Heavy Whipping Cream, .5 cup, whipped
* Salt, 2 tsp
* Pepper, black, 1 tsp
Directions
Heat large stock pot or stew pot and add olive oil
Put onions, celery, carrots, garlic and zucchini. Saute until starting to soften just a little but watch that the garlic does not burn. Add 3 cans (14 oz. cans) of stewed tomatoes to the pot and 6 cups of water (or stock if you have it) and bring to a simmer. When all vegetables are softened then you can use an immersion blender or pour into a blender to puree the soup. Add the whipping cream at the end and heat through. Serve with croutons or grilled cheese sandwiches. We love our grilled cheese on homemade whole wheat sandwich bread from freshly milled wheat. It is a wonderful comfort food meal with not a lot of calories. Enjoy! :)
