Introduction

Great on baked potatoes, pasta or by itself! Great on baked potatoes, pasta or by itself!
Number of Servings: 3

Ingredients

    2 tbsp Olive Oil
    1/4 of large onion, chopped (1 small onion would work)
    1 clove of garlic

    4 Tomatoes, skinned and chopped
    1/4 cup pureed tomatoes
    1 Small Red Bell Pepper (or to taste)
    2 Carrots, chopped
    1/2 cup vegetable stock (not calculated in)
    Sprinkle of crushed red pepper, to taste
    Basil or other seasonings to taste

Directions

Place oil, onion and garlic in large frying pan and sautee.
Add in all other ingredients except carrots and cook until desired thickness.
About 5 minuted before finished, add in carrots to cook until they are softened but not too soft.

Add to a baked potato, pasta or whatever else you want to try it with!
