Ingredients

    Servings: 4

    Ingredients
    1 whole green pepper chopped
    1 whole red pepper chopped
    1 cup of chopped onions
3 breasts of chicken cut into square pieces
4 servings of whole wheat spaghetti
    1 tablespoon of chopped garlic
1/2 cup lite asian sesame dressing
1 cup low sodium/low fat chicken broth
1 tablespoon of low fat creamy Skippy peanut butter (this is what I used - you can use whatever peanut butter you have/like)
1/4 cup of lite soy sauce
    Peanuts (optional)
    Sesame seeds (optional)

Directions

Directions
Cook spaghetti in large saucepan as directed on the box.
While the spaghetti is cooking, start to heat the dressing in the skillet. After about a minute, add the diced chicken and garlic.
Cook the chicken until it is no longer pink (about 3-5 minutes)
Then add the vegetables, broth and peanut butter. Stir and cook for another 5 minutes or until the chicken is done.
When the spaghetti is done, drain it and place it in the skillet with the chicken and vegetable mixture. Add the soy sauce and sesame seeds (optional) and mix. Cook all together in the skillet for about 5 minutes. Spoon onto your serving dish or dishes and then top with the peanuts (optional)
