Ingredients

* Shrimp, cooked, 3 oz
* Garlic, 1 tsp minced
* Egg, fresh, 1 large scrambled
* Curry powder, 1 tbsp
* Salt, 1 dash
* *Canola Oil, 1 1tsp
* Peas, frozen, .5 cup
* Onions, raw, 2 tbsp chopped
* Precooked leftover Brown Rice, long grain, .5 cup
Directions
I use a wok for this and I start by sauteing the onions in the oil. I then add the garlic right before I throw in the shrimp. Once the shrimp is heated through I throw in the thawed green peas and give it a pinch of salt and the curry powder. I then push it all to the side of the pan and add the egg in the bottom to scramble it and then incorporate it all into the mix once the egg is cooked. I add the rice last and toss it all to heat it through and serve with a sweet and sour sauce. I am allergic to soy so no soy sauce for me but you can use what you like. :)
You can also add other veggies that you like or have on hand. I will often throw in corn, carrots, snow peas... whatever is leftover in the fridge at the time. You can also add a nut of some kind if you like to add a bit of crunch to it.
