Introduction

Taken from the Superfoods HealthStyle book written by Steven G. Pratt and Kathy Matthews. Tasty, sugar content is a little higher then I would prefer otherwise this dish has some great nutritional qualities. Tastes like a crustless pumpking pie. Ingredients

    .25c Sugar
    3 tsp cinnamon
    .25 tsp ginger, ground
    .25 tsp cloves, ground
    2 lg eggs
    15 oz can of Libby's 100% pure pumpkin
    12 oz can Carnation evaporated non fat milk

Directions

Mix all ingrediants well. Put in an 8x8 baking dish and bake in a preheated oven for 30 minutes. Be careful not to over cook. Pudding should be a little wiggly in the middle.
