Ingredients

Filing:
1 oz Neufchatel Cheese, softened
1 tsp sugar
cinnamon to taste
1/2 small banana, sliced
Batter:
1 large egg, beaten
2 Tbsp skim milk
cinnamon to taste
2 slices 100% whole wheat bread
Cooking spray
Directions
1. In a small bowl, mix Neufchatel Cheese, 1 tsp sugar, and cinnamon.
2. Spread half of creamy cheese mixture on one side of each piece of whole wheat bread. Place banana slices on one bread slice and close the sandwich with cheese and bananas as filling.
3. In a separate, shallow but wide bowl, combine egg, milk, and cinnamon, beating briefly, just until mixed.
4. Preheat skillet on medium-low to medium heat. Cover skillet with nonstick spray.
5. Dip sandwich in egg mixture. Allow bread to absorb mixture, but not become so soggy that bread begins to tear or fall apart. Flip sandwich and allow mixture to absorb.
6. Place sandwich on skillet and allow to cook to a rich brown, then flip. Do not allow to scald or burn, but do not undercook to golden brown. It is important to moderate heat so the filling is able to warm and melt without burning the sandwich.
Makes one sweet, meal-size sandwich.
