Introduction

This is and adaptation another members (GECKOTLC) Chicken, blackbean, corn and potatoes scramble. I love this dish. I add the leftovers to my favorite salad for a southwestern salad! Yum! Ingredients

    3 boneless, skinless chicken breasts
    2 cups of brown rice, cooked
    - 1.5 cups black beans, rinsed and drained
    - 16 oz yellow corn, frozen
    - 1 cup salsa of preference
    - 1/2 cup shredded cheddar cheese
    - salt and pepper to taste

Directions

Dice chicken into cubes and cook using a pan sprayed with cooking spray til cooked all the way through. Sprinkle chicken with chili powder Add black beans, corn and rice and heat for 10 minutes Stirring well to heat throughly. Add salsa and heat another few minutes Sprinklle a small amount of cheese on top when served.
