And it can be cooked in a jiffy. Can add any and all the vegetables to this.

Ingredients

    *Ancient Harvest Quinoa, 2 cup (remove)
    Olive Oil, 2 tbsp (remove)
    *zucchini-1 medium w/skin-data for entire zucchini, 2 serving (remove)
    Red Ripe Tomatoes, 1 large whole (3" dia) (remove)
    and an assortment of indian spices

Directions

Put oil in a pan. Put 2 tsps zeera and let it cook. Then add the chopped tomatoes and let it cook.Add turmeric till you get a beautiful yellow. Add the zucchini and let it saute for a few seconds. Add the quinioa. Close the pressure cooker and let it whistle for 1 time. If cooking in a pan let it cook, till the quinoa is soft .Add water in the ratio of 1:1.5 i.e for every cup of quinoa add one and half cups of water.
Add any other spices as needed. I added Garam Masala.
