Introduction

This is my take on a traditional Vietnamese spring roll . Sometimes known as Summer or Imperial Rolls. A hand roll (not fried) with fresh ingredients. Ingredients

    Lettuce Leaves -Any Kind
    Spring Roll Wrappers (Tapico or Rice Paper-Any SIze (I prefer 8-12 inch)
    Beef, Chicken or Pork-Cooked Sliced paper thin
    Rice Vermicelli or Cellophane Noodles-Cooked and drained
    Cucumbers thinly sliced into long juiliene strips
    Cooked and Peeled Shrimp with Tails Removed
    Frsh Herbs-Mint, CIlantro, and Basil, Lemon Grass any Combination

    Optional Sauces Hoisin, Siracha Hot Sauce, Chilli Lime Sauce, Lime Juice with Salt and Pepper, or Peanut Sauce

    Optional Ingredients served alongside- A plate with fresh herbs, Bean Sprouts, and slices of lime and slices of fresh jalepenos

Directions

Makes 10 Spring rolls
Serving Size 1 large or 2 small
Often served with Pho-Vietnamese noodle Soup
or eaten by themselves as a light meal or snack
