Ingredients

4 Boneless, Skinless Chicken Breast halves, (1 1/4lbs.)
2 Tbsp Light Balsamic Vinaigrette [
    1 tsp Italian seasoning
    1/4 tsp seasoned pepper blend
    1 large Roma tomato
1/4 cup crumbled Reduced Fat Feta Cheese, (1 oz)

Directions

1. Set oven control to broil. Brush both sides of chicken breasts with dressing. Sprinkle both sides with Italian seasoning and seasoned pepper. Place on rack in broiler pan.

2. Broil with tops 4 inches from heat about 10 minutes, turning once, until chicken is no longer pink when centers of thickest pieces are cut. Top with tomato and cheese. Broil 2-3 minutes longer or until cheese is lightly browned.

[High Altitude (3500-6500 ft): Broil chicken about 15 minutes. Top w/ tomato & cheese. Broil 1-2 minutes longer.]

EBA puts the calorie count per serving as 220, however my count here at Sparkrecipes uses a light vinaigrette AND a reduced fat feta, reducing the calories to just 159 per serving.

I serve this with a fresh baby spinach salad for a healthy, great tasting, easy dinner.

My husband and I loved this! It was so easy to prepare and cooks so quickly. Better yet, I had all the ingredients at home, so that made it even easier! Will definitely make this again and again! - 4/13/10

    Incredible!
My husband made this and said he'd make it again, my 5yr old son loved the chicken (without the tomato & feta) and that made me love this simple but tasty recipe! - 4/11/11

    Good
It was good. Loads of flavor! I think I might have over cooked it though, so it was a little tough, but over all it was pretty good - 8/31/10

Tasty but not amazing. I wasn't a fan of the way the cheese cooked on top. - 4/18/10
