Introduction

Ingredients

    1 cup whole wheat flour
    1 cup all purpose flour
    2 tsp baking powder
    1/2 tsp baking soda
    1/4 cup sugar
    1/4 cup walnuts or pecans (optional)
    2 tbsp orange zest
    1 1/4 cups orange juice
    1/4 cup applesauce (or 1 banana)
    1 tbsp vanilla extract
    1/2 cup frozen or fresh cranberries ( or mixed berries)

Directions

Combine dry ingredients together except the cranberries.Combine all the wet ingredients together. Fold the wet ingredients into the dry until well incorporated. Lastly fold in the frozen or fresh cranberries. You could use other fresh or frozen fruit such as mixed berries or strawberries with no need to thaw. Pour into a greased muffin pan and sprinkle with sugar if desired for a crunchy muffin top. You could also now top each with a walnut,
