Ingredients

1 cup white flour
1/2 Tbsp baking powder
1/2 tsp salt (just a pinch really)
1 extra large egg (egg substitute will lower the calories)
3 Tbsp water
1 Tbsp butter (diet margarine will lower the calories)
3 Tbsp raisins
1 Tbsp ground cinnamon
Directions
Whisk the egg, water and butter together.
Blend in sifted flour, ground cinnamon, salt and baking powder.
Kneed lightly.
Add the raisins and blend in.
Place in non-stick bread pan (or for a flatter version, place a non-stick baking sheet).
Bake at 375 F for about 25-30 minutes until the bread is done. May also be baked in muffin pans for about 15-20 minutes to make 12 small muffins.
Alternatively!
The flour, baking powder and salt may all be substituted for self-raising flour to speed things up a bit.
