I saw Pat and Gina Neely make this on "Down Home With the Neelys" and the Romaine looked so good when Pat took it off the grill I decided I just had to try it! He made in on an indoor stove top grill plate and I think I'll try it that way too.
This is a slightly sweet dressing with a lot of flavor. It's great for BBQ's and formal events. I use this dressing with salads, spring rolls and as a marinade for BBQ. For salad use, it works well with the spring mix, chopped pecans or walnuts and dried cranberries. If you want to make a meal out of this salad add some grilled shrimp and 4 baked wonton wrappers.

this is the basic recipe for jicama potato salad with no mayo or potatoes. it's easy since jicama is eaten raw.
This recipe combines farro, an Italian grain similar to wheat, with roasted butternut squash and red onion. (It's loosely adapted from 101cookbooks.com.) Find farro in the Italian section of many supermarkets or specialty-food stores. This packs well for lunch and is a nice accompaniment to roast chicken or grilled pork.
This cranberry vinaigrette is beautiful and tastes wonderful. This is a lightened up version of the original recipe. I figured it makes 16 servings of 2 Tbs.

Additional Suggestions:
Instead of carrots add chopped, cooked shrimp or use baby bay shrimp.
Use your favorite vinegar or seasoning to spice it to your liking.
