Realizing I had to add the notion of complex carbs to my diet, I set out to make beans edible. I came up with this incendieary side dish and have been addicted to it since its inception. I like my food hot but those with more sensitive palates may consider cutting the chilpotles amount to a half or even a quarter.
So delicious and soothing, this soup is rather similar to French Onion. I always eat with fresh-baked bread.

Excellent winter soup! A single bowl makes a nice meal. Use less cheese or low-fat cheese for less fat or calories. Non-fat cheese doesn't work well in this case.
For a crockpot recipe, mix all ingredients together except for cheese and evaporated milk in a slow cooker, and simmer on low for 4 - 6 hours. Add evaporated milk and cheese 30 minutes before serving, stir, and serve when hot and incorporated. Do not boil.
