A wonderful Christmas morning breakfast treat. I think I got the original recipe from a Pillsbury cooking magazine.

These muffins are delicious and vegan, gluten free and sugar free! You can experiment and substitute different nuts and dried fruit in lieu of the walnuts and dates, depending on your preference.

This wasn't really a recipe. I just started throwing things together during breakfast. I wanted grits and my kids wanted bacon and eggs. I just mixed the two together for mine and added the cream cheese.

Super low fat and yummy!! For convenience, you can 'bake' this in a crockpot. Put the batter into a loaf pan that fits into a 6-quart crockpot. Cook on high for 4 - 4 1/2 hours.
