Preparations: The Day Before
Plan your table.
Shop for groceries.
Pick out flowers for your table.
Wash and/or iron table cloth.
Plan your table so that the teapots and platters are in easy reach of of each guest.
Plan for each guest to have a cup, saucer, plate, spoon, napkin, small fork for eating cake and butter knife for spreads.
Have extra utensils and napkins ready for unexpected guests.
"Royal Tea" has the fullest menu. It is served late afternoon after the family comes home from work.
A choice of teas, 2-3 meat dishes, potatoes, vegetables, green salad, fruit salad, sandwiches, Crab Cakes, Quiches, etc...
Warm Banana or Zucchini Bread, Scones, Tea Cakes, etc... Creme Fraiche, Devonshire Cream, Strawberry Preserves, Honey and other flavored butters.
Elegant deserts served with the second cup of tea.
And then, it is all followed up with a glass of champagne or a glass of sherry at the very end of the meal.
Grade B maple syrup really is the secret ingredient. The dark color gives it an extra caramelly flavor. Grocery stores carry it, but if you can't find it, Grade A will work just fine too.
Except for the "Elevenses", Afternoon Tea is served between the hours of 3:00-6:00pm.
The later the hour determines the amount and type of foods served.

With the second cup of tea, serve any favorite desert, a lovely pound cake, cheese cake, fruit tart or cupcakes.

I have modified the recipe to lower the fat. Remove the fat and skin. Tear the meat into strips and mix it back in with the greens.
There is a lot of flavor in the fat that floats to the top of the pot. Very tempting. Stay strong and skim it off.
