Chocolate mousse made with yogurt and egg whites; much lower in fat than traditional mousse.
Make this recipe at the end of August, and the melons are delish! i couldn't ask for ripper fruit. This makes a great snack, desert, or side item and it's a lot for just 115 calories. Enjoy the summer while we have it, and I hope you enjoy this mouth watering dish.
The coffee gives an interesting flavour, but orange or apple juice, tea, sherry, wine, or plain water may be substituted.
From the Canadian Living Summertime Cookbook Special 1983. Serve in smaller slices if you want a lower calorie count. The advantage of this flavourful cake is that it does not need ice cream or whipped cream to make it tasty, just serve it as is, or put some fresh blueberries on the side, and / or a slice of fresh orange.
I do not know what is Irish about this recipe, but it was so named when given to me. To reduce calories and fat, make it a deep dish apple pie using only half the pastry. See instructions for details.
Delicious: buttery and lemony, and gritty from the cornmeal. Serve with fresh peaches or other fruit and a dollop of whipped cream or low fat yogurt. A small slice is enough.

A low sugar, high fiber chocolate cake that is supposedly for breakfast... but I'm making it for desserts!
Thanks to LRUSSELLFAMILY for the original recipe -- I swapped out 1 cup of the sugar for splenda and the oat bran for wheat since that's what I had on hand!
