Ingredients

    1 cup flour and 6 tablespoons butter with enough ice water to make pastry.
    Peel and use an apple coring and sectioning tool to make apple section out of 3 pounds of apples
    2 tablespoons butter and 6 tablespoons sugar to make caramel
    1/2 cup sugar or as desired to sweeten the apples

Directions

Cut the cold butter into the flour, sprinkle on 14 cup ice water and stir with a fork. Add more ice water if needed to make pastry, do not over work or touch with warm hands. Pat into a disk, wrap in plastic, and chill in fridge for an hour.
Meanwhile, peel the apples, core and section. Do not worry if they brown, as this will not matter when cooked.
Put 2 tablespoons butter and 6 tablespoons sugar in a 9 inch cast iron fry pan over medium high heat, and watch carefully, stirring with a wooden spoon, to make a brown caramel. Remove from heat and the residual heat in the pan will ensure a dark caramel.
Place the apple sections in pattern on the caramel. making layers as needed. Sprinkle remaining sugar over the apples.
Roll out the chilled pastry, place over the apples, and tuck under the apple edges. Make steam escape gashes in the pastry.
Bake at 400F for 35 minutes until the pastry is golden. Remove from oven, cool for a minute or two, and using oven mitts and your husband if you need a strong arm, clap a plate over the pan, invert it, and voila, your upside down apple tart on a plate!
Eat it warm with cream and enjoy.
