Introduction

Ingredients

75 grams dark chocolate
1/3 cup unsweetened cocoa
2 T (or 3 packets) Knox unflavored gelatin
2 T hot water
1 1/2 cup non fat plain or vanilla yogurt
1 tsp vanilla (unless using vanilla yogurt)
1 T agave sweetener
2 egg whites
1/3 cup xylitol granules
Directions
Melt the chocolate in a double boiler.
Add vanilla to yogurt and mix in.
Add 1/2 cup of the yogurt to the melted chocolate and whisk in until smooth.
Mix gelatin with hot water (may need more water) and stir until dissolved. Whisk gelatin into chocolate mixture. Add remaining yogurt, agave sweetener, and cocoa powder to chocolate/gelatin mixture, and whisk until smooth.
Beat egg whites until stiff, using electric mixer. Add xylitol (or sugar), 1 T at a time, stirring gently to mix.
Fold egg whites into chocolate mixture and stir gently until consistency is even.
Spoon into serving dishes and chill for 1-2 hours.
Makes approx. 7 one-half cup servings.
Optional topping: raspberries or strawberries, etc.
