This is a simpler version of the Rabri which is eaten with hot fried Puries as part of our meals on special occasions like Pujas or Weddings.You can vary this by adding Fruits to it and serving it cold as a Dessert by itself.
I have modified this recipe from the original found at www.landolakes.com, to make it also casein-free. if you don't have to worry about dairy or casein in your diet, you can go ahead and use 3/4 cup real butter.
Also, I successfully used Bob's Red Mill All Purpose Baking Flour instead of making the separate GF Blend as recommended by Land O Lakes (see "cooking instructions" below for their GF blend recipe).
Another note: My recipe program calculates the nutrition as 257 calories per cookie. the landolakes website lists calories at 130 g per cookie. And of course SparkPeople calculates the calories in the 300+ range per cookie. So, take the nutritioin facts with a grain of salt, or calculate it yourself to get a number you are comfortable with.

I substituted additional glace cherries to account for the glace mixed fruit in the nutritional analysis. As I could not find glace mixed fruit in the food listing, nor could I find nutritional information for it online.

You can replace the Craisins in this recipe with cut up gumdrops, raisins, or cut up dried fruit.
This is a version of Texas Sheet Cake (delicious!) modified to half the usual calories, and put in cupcake form for portion control.

I love Reese's peanut butter cups, but clearly it's not diet food! These are an excellent substitution. If you are doing weight watchers these are 2 points each.
The original recipe includes a delicious orange filling - check out the Bon Apetit website for that. Since I left the yummy filling out, I added the almond and orange extracts for extra flavor.
1. In food processor/blender, puree peaches (peeling the peaches is optional).
2 Blend peach puree and all ingredients until very smooth.
3 Chill ice cream mix until cold, about 1-2 hours.
4 Pour mix into your ice cream machine and process according to manufacturer's directions.
5 It may be necessary to continue the"chill/beat" cycle for 15-30 minutes after the first cycle stops.
6 Note: Since fresh Peach Ice Cream is very soft, it maybe necessary to let it"ripen" in your ice cream maker for an additional 45 minutes (or place in a bowl in freezer) if you prefer a firmer ice cream.

The pasty is different to your normal butter pastry but you have to compromise somewhere if you want to cut out the fat and these are a nice little treat without to much guilt.
You can use any jam you like, try sugar free jam or put a fresh strawberry in each one with only a tiny bit of jam
