An easy healthy mac n' cheese dish. Can easily be done Gluten free, as that was how I made it the first time. I added instructions for that as well.
This is a somewhat healthified version of gumbo. It could be made lower fat by using 1/4 cup of oil in the roux and/or using a spicy chicken sausage instead of chorizo or andouille. It would also be good without any sausage for a vegetarian entree. Serve with steamed rice, preferably brown. It is worth the effort, and any extra freezes well for a quick weeknight meal. Great comfort food!

original calls for 1 cup splenda - changed it to 1/2 cup splenda & 1/2 cup sugar to try to cut the splenda aftertaste... add about 300-350 calories to the whole thing - so at ten servings, only adding 30 calories to each serving..
Used this for HCG Diet Phase 3 (splenda only) and Phase 4 (with the 1/2 sugar)
This Pizza Dough can be made and stored in the refrigerator for 2 days, or frozen and unthawed later.
