Ingredients

    1 tsp granulated sugar
    3 tbsp soy sauce
    1 tsp ground ginger
    12 tbsp light mayo
    1/2 cup sliced waterchestnuts
    1/2 cup diced fresh celery
    1/2 cup diced onions
    3 chicken breasts, cooked, cubed
    1/2 cup slivered almonds
    4 cups fresh spinach

Tips

Serve chilled. Packs well in lunches. Use low sodium soy sauce to reduce sodium.


Directions

Combine sugar, soy sauce, ginger, and mayo. Mix well. Add waterchestnuts, celery, onions, and cooked cubed chicken. Serve over fresh spinach and top with slivered almonds.
