Simple, quick sauce. No need to buy canned when you can make your own and it's so much better! Then freeze the left over sauce for later use.

High fiber, low fat, and filling sauce for pasta. A generous 1.5 cup serving is only about 160 calories! Delicious with Parmesan cheese or drizzled with olive oil and crushed red pepper flakes over penne pasta. This recipe makes a lot and it freezes well.
Saute spinach and garlic on the stove. Add ricotta, salt and pepper. Cut Zucchini in 4 pieces and deseed. Stuff with ricotta filling. In a separate pan add tomatoes, basil, and pumpkin. Salt and pepper to taste. Top stuffed zucchini with sauce and cheese. Bake for 35 minutes at 400 degrees.
Heat oven to 450°. Grease two 10" round pizza pans. Divide dough inson2 pieces. Roll out or stretch each dough piece into 10" round; transferring pans. Brush each with 1/2 T oil. Bake 8-10 mins, until starting to brown. Meanwhile, using vegetable peeler, cut zucchini lengthwise into thin ribbons. Spread 1/2 C sauce over each crust to within 1/2" of the edge. Sprinkle each with 1/3 C mozzarella, 1/4 C feta and 6 olives. Bake 15 minutes or until baked through in centers. Cool slightly. Top with basil.
