This is my grandpa's version of ministrone soup. this is NOT SOUP!
Feel free to use the sauce for any italian dish!
We are not breading the chicken for this one but don't worry, the whole family will enjoy(promise)

An easy way to have dinner ready for the whole family. Has every serving of vegetables that you need, may not be on the light side of calories, but considering the vegetable intake, it is well worth it.
Layer 1/2 meat, eggplant, zucchini, cheese, then sauce. Layer all ingredients again. Cover with foil and cook at 400 for 30 minutes. Remove foil and continue cooking for 15 minutes.
Great for large families, smaller families and freezing meal portions, or taking to potlucks. Plan 3 shells per adult and up to 2 per child.
I love eggplant and wanted to make a litter version of an old Family Recipe! And this is what I came up with. I enjoyed better then the high fat one. Hope you do to.

This is a tasty spaghetti sauce full of spices and seasonings but without the meat. You can add whatever meat if you want but if you do so but add in the extra calories
Whole wheat linguine tossed with butter, pesto, spinach, diced tomatoes and topped with grilled chicken breast.
