A great, easy meal prep taco filling that has hidden veggies in it - you seriously don't taste the mushrooms.
This is for my regular fat head crust and cheese on top. Since the pepperoni brands I use vary, I need to add those separately.
Steam the 2 steamer Cauliflower bags, and then mash or grate to desired consistency. Pan fry the the bacon, and set aside. To make the cheese sauce: Add 1/2 cup butter, 1/2 cup heavy cream, and cook on med- low, stirring until butter melts. Then add 4 tablespoons of cream cheese and stir well until thoroughly melted and mixed. Then add 2 cups sharp cheddar cheese. Once that is all mixed, add bacon pieces. Combine well and mix in the cauliflower.
Low carb. Serve with fresh veggies, Keto crackers or melted over hot veggies or steak.
