No fattening mayonaise in this salad. Lots of great Vegetables. Any White low fat cheese, even Jack or Swiss would be okay. Fresh Parsley is best.

whisk together lemon juice, olive oil, garlic, salt pepper
and a generous pinch of hot red pepper flakes. Pour over kale in serving bowl and toss well. Add 2/3 of the cheese and toss again. Let kale sit for at least 5 minutes. Add bread crumbs toss again, and top with remaining cheese.

I based this recipe on my father-in-law's totally addictive potato or macaroni salad. I use greek yogurt and cottage cheese to decrease the amount of mayo.you can use regular yogurt, but it gets watery and seperates. also works for tuna salad. the celery salt is the secret ingredient.
This is a low sodium raspberry vinaigrette with a nice kick. I was tired of trying to find a low sodium salad dressing without all the preservatives.
2 T red wine vinegar
1 t dijon mustard
1/2 t sale
1/4 t pepper
3 T olive oil
whisk olive oil into first 4 ingredients
pour over:
1/2 c corn
1 can rinsed garbanzo beans 540 ml
1 can kidney beans 540 ml
1/4 c onion
1/2 c chopped red pepper
I make this recipe for my family all the time. It is easy to change around. I omit feta for one of my children, add more spinach or sometimes I leave out the capers. I have also added cooked boneless, skinless chicken breast served it warm adding the spinach right before serving so that it does not wilt. It is a really tasty recipe. The whole grain pasta and spinach make it so nutritional. Hope you like it . This recipe makes approx 10 -1 cup servings
