Introduction

I based this recipe on my father-in-law's totally addictive potato or macaroni salad. I use greek yogurt and cottage cheese to decrease the amount of mayo.you can use regular yogurt, but it gets watery and seperates. also works for tuna salad. the celery salt is the secret ingredient. Ingredients

    1 large head of cauliflower coarsley chopped and lightly steamed
    4 hard boiled eggs chopped
    2 bell peppers chopped
    1 med-large onion chopped
    1 container cottage cheese
    1 container lo or fat free greek yogurt
    1/4 cup olive oil mayo or low fat of your choice
    2-3 tbs yellow mustard
    1-2 tsp celery salt
    salt and black pepper to taste

Directions

steam the caulflower just enough to soften it- about 5 minutes. rinse with cold water and let cool.
mix together all the ingredients and chill 2 hours before serving.
makes about 12 servings
