Made with Applesauce & Protein Powder - Fruit could be added. Optimal topping would be fresh fruit: Applesauce, Blueberries or Peaches are my favorites! Probably should be served with a lean protein to get adequate amount of Protein for Breakfast.

Bake 10 minutes at 400 degrees and then 20 minutes at 350.
This was very good! I am allergic to milk, so I modified it for me. If you'd rather use real milk and cheese, go for it, just make sure they're low fat!
When I noticed all of the zucchini I had in need of use. I doctored my Vegetable Strata recipe. This makes 2 9x13 pans. (I have a big family so if you need to make just one half the recipe. Or you could make it and freeze it then bake it when you want some more!) :-)
This is a spin on a traditional "arroz con coco" recipe. By swapping the milk for water and the coconut milk for the light version it cuts the calories nearly in half! I personally love having it hot for breakfast, but it does well cold as a dessert or treat as well.
