Ingredients

1/3 cup oats (not quick or instant)
1 cup minced onion
1 cup minced green bell pepper
1 cup kidney beans
1 cup shredded zucchini
2/3 cup Fiber One cereal
1 egg white
2 tbs. liquid egg white
2 tsp. tamari
1 tsp. salt
Directions
Grind Fiber One to crumbs in a food processer and set aside. Drain kidney beans then mash with a potato masher and set aside. Add 1/3 cup boiling water to oats and set aside. Blend egg white, liquid egg white, tamari and 1/2 teaspoon of salt and set aside.
Spray a large pan with nonstick cooking spray and cook vegetables with 1/2 teaspoon of salt over medium heat, stirring occasionally. Cook until most liquid is gone.
Combine veggies with oatmeal, ground cereal, mashed kidney beans, and egg mixture. Blend well. Form mixture into six balls and flatten into patties. Allow patties to cool for an hour in the fridge before cooking, or freeze for later use.
Cook for 5-6 minutes each side in a skillet sprayed with nonstick spray.
Makes six servings.
