Nutrition & Calorie Comments  

I changed the recipe a bit. Added extra 1/4 c. mashed banana, 1/4 c. applesauce, 1/4 c. butter, 1/2 c. Splenda, 1/2 c. water. Increased baking time by 5 min. Used sugar free cream cheese frosting. 8 oz cream cheese, 1/2 c. butter, 1/3 c. Equal, 1/2 c. Splenda and 2 tsp vanilla
Based on the other comments I doubled the applesauce and used apple juice concentrate instead of the water and it turned out well. I was making the cake for a little boy who cannot have sugar, so instead of the whole wheat flour I used white flour for a lighter flavor. Will make again.
I made this cake for my father in law. It is his birthday and he is diabetic. He liked it very much. I tried it, it was a little dry but I put cool whip lite on it and it wasn't too bad. It wasn't sweet but that was the whole point of making it sugar free. Probably want try again though.
